You might know that most essential oils are created using steam distillation. Water is heated until it becomes steam, which draws the oils out of the plant materials. It’s a safe, pure process, but steam cannot draw out heavier molecules or compounds that may have therapeutic properties. And for sensitive plants, heat that is too high can cause chemical changes.
Therefore to secure the broadest array of aromatic compounds from certain plants—and to not damage them—a process called CO2 extraction is used. Carbon dioxide (CO2) is pressurized into a liquid. It “washes” over the plant material, extracting the oils, including the heavier molecules. When the CO2 warms, it returns to the gas state, and the pure oils are left behind.

CO2 extraction can also collect the most fragile elements of the fragrance and plant at the plant’s natural temperature, so they do not degrade.
